NoshCoverMECHrev2_extracted_back“The day our kitchen became gluten-free was the day I promised that no cookie, strudel, brownie, pie, cake, tart, or treat would be left behind.” That was the pledge Lisa Stander-Horel made when she discovered her husband Tim’s, and consequently her own, gluten intolerance. Descended from a long line of bakers, she was determined to continue making the rugelach, mandelbrot, strudel, and challah of her childhood, so she set out to recreate such treasured recipes—all gluten-free. The result is NOSH ON THIS: Gluten-Free Baking from a Jewish- American Kitchen (The Experiment; $19.95; ISBN 978-1-61519-086-7; trade paperback original; on sale now).

Over 100 recipes, with 125 color photographs, for a wide variety of sweet and savory noshes that prove baking gluten-free doesn’t mean sacrificing familiar tastes or textures. The book features:

  • (Deceptively) gluten-free versions of Jewish-American classics from Chocolate Babka to Hamantashen, and Big Fat Baked Sufganiyah Jelly Donuts to Sweet Potato Kugel
  • An “Out of a Box” chapter explaining how to get the most out of a gluten-free mix
  • Gluten-free versions of bakery and store-bought favorites, from Dorable Fudgies to Cory-O Sandwich Cookies to O’Figginz Bars, and, the Horels’ most-missed cookie, Mallo Bites
  • A guide to locating specialty ingredients and equipment, dairy-free alternatives for many of the recipes, and a Jewish holiday baking chart
  • Challah Corn Bread Stuffing, especially notable because this year the first day of Hanukkah coincides with Thanksgiving Day, making for “Thanksgivukkah,” a once-in-a-lifetime event , when—that won’t happen again for another 77,798 years!

Nosh on This also features a foreword from former New York Daily News food editor and author of the award-winning Jewish Home Cooking, Arthur Schwartz, who says, “There is nothing like Nosh on This, and I don’t know any bakers as dedicated as Lisa and Tim [are] to . . . gluten-free baking.”
